  • 🥭 2 ripe mangoes unit
  • 🍌 2 bananas
  • 🥛 500 ml whipping cream

  • 🌰 100 g walnuts (optional)
  • 🍦 1 tablespoon vanilla essence

  1. Let's start preparing the meringue. Preheat the oven to 120°C. In a clean bowl, beat the egg whites until stiff and add the sugar little by little, without stopping beating, until you achieve a firm and shiny meringue.
  2. On a baking tray, place parchment paper and, with the help of a pastry bag, form meringue circles of the size you want. Bake for about 1 hour or until dry and crisp.
  3. While the meringues are cooling, peel and slice the mangoes and bananas. Booking.
  4. For the cream, beat the cream with the lemon juice and vanilla essence until it is whipped and firm. You can add a little sugar to taste if you prefer it sweeter.
  5. Once the meringues are cold, start assembling the chajá. Place a meringue base on a plate, add a layer of cream, then a layer of fruits and, if you want, a little chopped nuts.
  6. I repeated the process until I finished with all the ingredients, finishing with a layer of cream and decorating with slices of fruit and nuts.
  7. Let it cool in the refrigerator for at least 2 hours before serving so that the flavors integrate.

For an extra touch, you can add a little grated chocolate between the layers. It is also possible to replace the fruits with others of your choice, such as strawberries or peaches.
